Soya bean chunks have a neutral taste and a meat-like texture
when rehydrated. They can be used in a variety of dishes such as curries,
stir-fries, stews, and salads.
To prepare a simple soya bean pulao, follow these steps:
Ingredients:
1 cup of basmati rice.
Half cup curd
1 medium onion
50 gm French beans
50 gm green peas.
50 gm cauliflower
1/4 cabbage shredded
1 small carrot🥕
Half cup soyabean chunks
1 tbsp. of ghee.
4 black peppers
Half inch cinnamon
4 cloves
1 bay leaf
1 teaspoon garlic ginger paste
Instructions
Wash and rinse 1 cup of basmati rice until the water runs
clear. Soak the rice in water for about 30 minutes, then drain it.
Also soak soya chunks for 15 min and drain it when they are
soaked properly
Heat 2 tablespoons of oil or ghee in a large pan or pot over
medium heat.
Add black pepper, cloves, cinnamon and bay leaf.
Add finely chopped onions (1 medium-sized) and sauté until
they turn golden brown.
Add 1 teaspoon of garlic and ginger paste. Sauté for a
minute until fragrant.
Add any vegetables of your choice, such as diced carrots,
peas, bell peppers, or cauliflower and soaked soya chunks. Stir-fry the
vegetables for a few minutes until they are slightly cooked.
Add curd and mix well, allow 5 mins
Add the drained rice to the pan and mix well with the
vegetables.
Add 2 cups of water and season with salt to taste. You can
also add spices like
Bring the mixture to a boil, then reduce the heat to low.
Cover the pan with a tight-fitting lid and let the pulao simmer for about 15-20
minutes, or until the rice is cooked and the water is absorbed.
Once the pulao is cooked, turn off the heat and let it sit
covered for another 5 minutes.
Garnish will shredded cabbage and coriander.
