Here's a quick recipe for mushroom soup that you can make in less than 20 minutes:
Ingredients:
1 tablespoon butter
1 medium onion, chopped
200 gms mushrooms
2 cloves of garlic
Half-inch ginger
2 cups of vegetable broth
Salt and pepper to taste
Instructions:
Melt the butter in a large saucepan over medium heat.
Add the chopped onion and mushroom (keep 10 slices of mushroom separate to add later) with garlic and ginger to a pan and cook for 10 minutes, until softened. Blend the mixture and pass it through the strainer.
Add the sliced mushrooms to the mixture and cook for another 2-3 minutes, until the mushrooms are tender
Pour in the vegetable broth, add salt and pepper, and bring the mixture to a boil.
Reduce the heat and let the soup simmer for 2-3 minutes.
Cook for another 1-2 minutes, until the soup is heated through.
