Cabbage sabzi is a delicious and healthy Indian dish that is
easy to prepare. Here is a simple recipe to make cabbage sabzi:
Ingredients:
1 medium-sized cabbage
1 potato
2 tablespoons oil
1 teaspoon cumin seeds
1 teaspoon of mustard seeds.
1 onion finely chopped.
2-3 green chilies, slit.
1/2 teaspoon turmeric powder
5 to 6 curry leaves
Salt to taste
Fresh coriander leaves for garnishing
Instructions:
Start by preparing the cabbage. Remove the outer leaves and
discard them. Rinse the cabbage under running water and pat it dry with a
kitchen towel. Shred the cabbage using a knife.
Heat oil in a large pan or kadhai over medium heat. Once the
oil is hot, add mustard seeds, cumin seeds and let them splutter. Then add
curry leaves.
Add the finely chopped onions and slit green chilies to the
pan. Saute them until the onions turn translucent and slightly golden.
Add chopped potatoes and cover with lid. Let it cook for 10
min
Add the sliced cabbage to the pan and mix it well with the
onion mixture. Cook the cabbage for about 5 minutes, stirring occasionally.
Sprinkle turmeric powder, coriander powder, and salt over
the cabbage. Mix everything together until the spices are well coated with the
cabbage.
Reduce the heat to low, cover the pan with a lid, and let
the cabbage cook for about 10-15 minutes. Stir occasionally to ensure even
cooking. If the cabbage starts sticking to the pan, you can add a tablespoon or
two of water.
After 10-15 minutes, check if the cabbage has turned tender
and cooked. If not, cover and cook for a few more minutes.
Once the cabbage is cooked to your desired texture, remove
the lid and cook for an additional 2-3 minutes to evaporate any excess
moisture.
Garnish the cabbage sabzi with freshly chopped coriander
leaves. Enjoy with roti or rice.
