recipe for making poha:
Ingredients:
2 cups poha (flattened rice)
1 onion, finely chopped
1 or 2 green chilies, chopped (adjust according to your
taste)
1/4 cup roasted peanuts
1/4 cup fresh coriander leaves, chopped
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
8-10 curry leaves
1/2 teaspoon turmeric powder
Salt to taste
2 tablespoons oil
Lemon wedges for serving (optional)
Instructions:
Rinse the poha: Take the poha in a colander and rinse it
under running water for a few seconds. Gently stir with your fingers while
rinsing. Be careful not to break the flakes. Drain the water completely and set
aside.
Heat oil: In a large pan or kadai, heat the oil over medium
heat.
Add mustard and cumin seeds: Once the oil is hot, add the
mustard seeds and cumin seeds. Allow them to splutter.
Add peanuts and curry leaves: Add the peanuts and curry
leaves to the pan. Sauté for a couple of minutes until the peanuts turn
slightly golden.
Add onions and green chilies: Add the chopped onions and
green chilies to the pan. Sauté until the onions become translucent and light
golden in color.
Add turmeric powder and salt: Sprinkle turmeric powder and
salt over the onion mixture. Mix well to ensure the spices are evenly
distributed.
Add poha: Add the drained poha to the pan. Gently mix
everything together, ensuring that the poha is coated with the turmeric and
onion mixture. Be gentle to avoid breaking the poha flakes.
Cook and cover: Cover the pan with a lid and cook for 2-3
minutes on low heat. This will help steam the poha and make it soft and fluffy.
Garnish and serve: Remove the lid and check if the poha is soft and well-cooked. If not, cook for another minute or two. Finally, garnish with chopped coriander leaves and mix gently. Serve hot with lemon wedges on the side for an extra tangy flavour if desired.
